The pan will change colour soon as from the first use will start to season - this is to be espected and is normal & will not affect the pan & will increase the taste of youre next paellas by giving a crusty rice at the bottom - the famous SOCARRAT. Inclusive if you forget to dry the pan and you find it rusty don't worry - just wash it again and scrub with steel wool sponge & soap , dry and coat with oil and the pan will be perfectly safe.
